Fontconfig is overriding the fonts configured in some apps.

I’m using Ghostty, and the font set in ~/.config/ghostty/config is not being respected because the font defined in ~/.config/fontconfig/fonts.conf is overriding this specific Ghostty setting.
This fontconfig/fonts.conf is also not being modified by the omarchy-font-menu script.
